Nestled quietly in Aizu-Wakamatsu, a city steeped in samurai history, Suehiro Sake Brewery has stood as a symbol of tradition and innovation since its founding in 1850 ?amidst the turmoil of the Boshin War. Encouraged by the Aizu domain as part of a strategy to raise war funds, the brewery took its first steps during this pivotal moment in Japanese history.Over the years, Suehiro has played a pioneering role in the evolution of sake brewing, particularly noted for its key contributions to the development of the Yamahai method?a technique that left a lasting impact on the entire industry. Under the leadership of its seventh-generation head, Suehiro also helped usher in the modern ginjo sake movement, expanding the boundaries of what sake could be.Today, as the brewery enters a new chapter, the eighth-generation head continues this legacy of innovation, honoring the past while boldly charting a path toward the future.
