TSUJI HONTEN

This brewery is led by a brother-and-sister team. The younger brother leads the operations of the company while the older sister works as the toji (brewmaster) and utilizes an ancient style of brewing called “Bodaimoto” the brewery was responsible for reviving after more than 600 years. Being established in Okayama, they strive to use only Okayama rice. By next year, their goal is to use only Omachi rice and brew exclusively with the Bodaimoto method.

A floral aroma of white bouquet, green apple, and grapefruit is followed by a mineral nuance. This sake is a great bridge sake with wine, sharing some resembling characteristics with the Chenin Blanc grape. It has a crisp and clean finish, best served chilled.
