This brewery is lead by a brother and sister team. The older sister works as the “toji” or “brew master” and utilizes an ancient style of brewing called “bodaimoto” that Gozenshu was responsible for it’s revival after more than 600 years. Being in Okayama, they strive to use only Okayama rice so by next year their goal is to ONLY use Omachi and only brew with Bodaimoto method.

A floral aroma of white bouquet, green apple, and grapefruit is followed by a mineral nuance. This sake is a great bridge sake with wine, sharing some resembling characteristics with the Chenin Blanc grape. It has a crisp and clean finish, best served chilled.
